Ingredients for Chicken Barreta Recipe
- 4 boneless, skinless chicken breasts
- 4 thin slices of prosciutto
- 4 thin slices of provolone cheese
- 1 cup all-purpose flour
- 2 eggs, beaten
- 2 cups Italian breadcrumbs
- Salt and pepper to taste
- 1/2 cup vegetable oil
Instructions for Chicken Barreta Recipe
- Preheat your oven to 375°F (190°C).
- Take each chicken breast and place it between two pieces of plastic wrap. Using a meat mallet, pound the chicken until it’s about 1/4 inch thick.
- Season both sides of the chicken breasts with salt and pepper.
- Place a slice of prosciutto and a slice of provolone cheese on each chicken breast.
- Roll up each chicken breast, tucking in the ends as you go, and secure with toothpicks.
- Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.
- Coat each chicken breast first in the flour, then in the beaten eggs, and finally in the breadcrumbs.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
- Once the chicken breasts are browned, transfer them to a baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken is fully cooked.
- Remove the toothpicks from the chicken and serve hot.
