Pulao Recipe Food Fusion

Recipe for Pulao from Food Fusion:


  • Basmati rice (2 cups)
  • Water (4 cups)
  • Cooking oil (1/4 cup)
  • Onion (1 large, sliced)
  • Cumin seeds (1 tsp)
  • Bay leaves (2)
  • Green cardamom (4)
  • Black peppercorns (4)
  • Cloves (4)
  • Cinnamon stick (1)
  • Salt (1 1/2 tsp)
  • Carrots (2, chopped)
  • Green peas (1 cup, frozen or fresh)
  • Chicken or beef (1 lb, boneless, cut into small pieces)


  1. Wash the rice in cold water, then soak it in cold water for 20-30 minutes.
  2. In a large pot, heat the oil over medium heat. Add the sliced onion and fry until it turns golden brown.
  3. Add cumin seeds, bay leaves, green cardamom, black peppercorns, cloves, and cinnamon stick. Fry for 1-2 minutes until the spices become fragrant.
  4. Add the chicken or beef and fry for 5-6 minutes until it is cooked through.
  5. Add the chopped carrots and green peas, and fry for another 2-3 minutes.
  6. Drain the soaked rice and add it to the pot. Fry for 1-2 minutes until the rice is well-coated with the oil and spices.
  7. Add water and salt, and bring to a boil. Reduce heat to low, cover the pot with a tight-fitting lid, and let the rice cook for 15-20 minutes, or until all the water has been absorbed and the rice is tender.
  8. Turn off the heat and let the pulao rest for 5-10 minutes. Then, fluff the rice with a fork and serve hot.
