Grilled Peach and Burrata Salad Recipe

Grilled Peach and Burrata Salad is a summer salad made with juicy grilled peaches, creamy burrata cheese, and a bed of fresh greens. This salad is perfect for those hot summer days when you want something light and refreshing.

Ingredients for Grilled Peach’s and Burrata Salad:

  • 4 ripe peaches, halved and pitted
  • 8 oz. burrata cheese
  • 2 cups arugula
  • 1/4 cup chopped pistachios
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions for Grilled Peach and Burrata Salad:

  1. Preheat your grill to medium-high heat. Brush the peach halves with olive oil and season with salt and pepper.
  2. Place the peaches on the grill, cut-side down, and cook for 3-4 minutes, or until grill marks appear. Flip the peaches over and cook for another 2-3 minutes, or until they’re slightly softened.
  3. Remove the peaches from the grill and let them cool for a few minutes. Meanwhile, arrange the arugula on a platter.
  4. Tear the burrata into pieces and scatter them over the arugula.
  5. Once the peaches have cooled slightly, cut them into slices and arrange them on top of the burrata.
  6. Sprinkle the chopped pistachios over the top of the salad.
  7. In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle the dressing over the top of the salad.
  8. Season with salt and pepper to taste.

That’s it! This grilled peach and burrata salad is perfect as a light lunch or as a side dish for a summer BBQ. The combination of sweet peaches, creamy burrata, and crunchy pistachios is a winner, and the balsamic vinaigrette ties everything together perfectly. I hope you enjoy this unique and delicious salad as much as I do!
