Grilled Peach and Burrata Salad Recipe
Grilled Peach and Burrata Salad is a summer salad made with juicy grilled peaches, creamy burrata cheese, and a bed of fresh greens. This salad is perfect for those hot summer days when you want something light and refreshing.
Ingredients for Grilled Peach’s and Burrata Salad:
- 4 ripe peaches, halved and pitted
- 8 oz. burrata cheese
- 2 cups arugula
- 1/4 cup chopped pistachios
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions for Grilled Peach and Burrata Salad:
- Preheat your grill to medium-high heat. Brush the peach halves with olive oil and season with salt and pepper.
- Place the peaches on the grill, cut-side down, and cook for 3-4 minutes, or until grill marks appear. Flip the peaches over and cook for another 2-3 minutes, or until they’re slightly softened.
- Remove the peaches from the grill and let them cool for a few minutes. Meanwhile, arrange the arugula on a platter.
- Tear the burrata into pieces and scatter them over the arugula.
- Once the peaches have cooled slightly, cut them into slices and arrange them on top of the burrata.
- Sprinkle the chopped pistachios over the top of the salad.
- In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle the dressing over the top of the salad.
- Season with salt and pepper to taste.
