Pulao Recipe Food Fusion
Recipe for Pulao from Food Fusion:
Ingredients:
- Basmati rice (2 cups)
- Water (4 cups)
- Cooking oil (1/4 cup)
- Onion (1 large, sliced)
- Cumin seeds (1 tsp)
- Bay leaves (2)
- Green cardamom (4)
- Black peppercorns (4)
- Cloves (4)
- Cinnamon stick (1)
- Salt (1 1/2 tsp)
- Carrots (2, chopped)
- Green peas (1 cup, frozen or fresh)
- Chicken or beef (1 lb, boneless, cut into small pieces)
Instructions:
- Wash the rice in cold water, then soak it in cold water for 20-30 minutes.
- In a large pot, heat the oil over medium heat. Add the sliced onion and fry until it turns golden brown.
- Add cumin seeds, bay leaves, green cardamom, black peppercorns, cloves, and cinnamon stick. Fry for 1-2 minutes until the spices become fragrant.
- Add the chicken or beef and fry for 5-6 minutes until it is cooked through.
- Add the chopped carrots and green peas, and fry for another 2-3 minutes.
- Drain the soaked rice and add it to the pot. Fry for 1-2 minutes until the rice is well-coated with the oil and spices.
- Add water and salt, and bring to a boil. Reduce heat to low, cover the pot with a tight-fitting lid, and let the rice cook for 15-20 minutes, or until all the water has been absorbed and the rice is tender.
- Turn off the heat and let the pulao rest for 5-10 minutes. Then, fluff the rice with a fork and serve hot.
